Sherry California Cooking Wine

Barrel aged in limited quantities and seasoned with 1.5% sea salt, our Sherry Cooking Wine is characterized by a nose redolent of almonds and caramel, a flavor of toasted nuts and chocolate, and an unmistakable dry yet smooth finish. It's famous for adding complex flavors to Spanish style chicken or shrimp tapas, and can be used to spice up a wide variety of pork, pasta, and rice dishes. 3500 cases have been aged to perfection.

Shrimp Tapas in Sherry Wine Sauce

  • 1 slice of thick-cut bacon cut into 1/4-inch strips (optional)
  • 2 Tbsp. Napa Valley Naturals Olive Oil
  • 2 oz. crimini or button mushrooms, sliced into quarters
  • 1/2 lbs. large shrimp (about 16), peeled and deveined, leaving tails attached
  • 2 cloves garlic, thinly sliced
  • 2 Tbsp. Napa Valley Naturals Sherry Wine
  • 1 Tbsp. Fresh Lemon Juice
  • 1/4 tsp. red pepper flakes

Cook bacon in large skillet over medium heat until crispy. Remove from skillet, drain on paper towels. Add oil to bacon drippings in skillet. Add mushrooms, cook and stir for 2 minutes. Add shrimp and garlic, cook and stir 3 minutes or until shrimp turn pink and opaque. Stir in sherry, lemon juice and red pepper flakes. Remove shrimp to serving bowl. Cook sauce for 1 minute or until reduced and thickened. Pour over shrimp. Sprinkle with reserved bacon. Serves 2.
